Serves 4

Nashville Hot Sauce
¼ cup plus 1 tablespoon cayenne pepper
⅛ cup granulated sugar
1 teaspoon paprika
1 teaspoon salt
2 cups unsalted butter, melted
¼ cup Loveless Cafe Plain Ol' Hot Sauce

Fried Chicken
1 fryer chicken (3 pounds or less)
3 tablespoons salt
2 cups Loveless Cafe Fried Chicken Breading
Vegetable Oil (for frying)
8 slices Texas toast (or thick-cut white bread)
Dill pickle chips (optional)
½ teaspoon kosher salt

Directions:

Make Nashville Hot Sauce
1. Combine spices in a large mixing bowl

Make Fried Chicken
1. Cut chicken into eight pieces and rinse. Soak in cold, salted water for 30 minutes. Drain and pat dry.
2. Pour Fried Chicken Breading into a bowl. Heat 1 inch of vegetable oil in a large skillet over medium-high heat (375 degrees in an electric skillet).
3. Dredge chicken in breading, coating well on all surfaces. Pat off excess breading and place chicken in hot oil, making sure pieces are not touching each other.
4. When chicken is browned (approximately 5 minutes), turn pieces over and reduce heat to medium (300 degrees). Cover and cook for 20 minutes.
5. Remove lid, increase heat to medium-high and flip chicken. Cook an additional 5 to 7 minutes.
6. Remove chicken from skillet, drain on a paper towel, then toss with Nashville Hot Sauce. Serve on sliced bread topped with dill pickle chips and sprinkled with kosher salt.
